Kale salad
Kale is such a nutritious, delicious food – it has the most protein of any of the green leafy vegetables and is loaded with lots of other vitamins and minerals. I actually didn’t start eating kale until my early 20’s. My brother always fed it to his pet iguana – never knew it was good for me too! I tend to wait until the warmer months to enjoy raw veggies, and lightly saute them during the fall and winter.
1 bunch kale
1 avocado
Juice of 1 lemon
Celtic sea salt
chopped walnuts
1 pear
1. Remove the tough stems from the kale and tear the remaining leaves into small pieces
2. Place in a large bowl with the avocado (roughly chopped) and the lemon juice
3. Sprinkle with sea salt and then massage the mixture with your hands for about 2 minutes
4. Add the walnuts and the chopped pear and you’re done!
This tastes even better the next day. The lemon juice helps break down the kale a bit to make it tasty while still raw. It’s endlessly variable – feel free to alter the recipe!
